Curried Rice Salad

 

A great winter salad for leftover cooked rice.  The rich flavour of Sunflower Sprouts is perfect, but Mixed sprouts also taste good, so ring the changes….

 

1 pack Aconbury Sunflower Sprouts

300ml cooked rice

1-2 tbsp curry paste

½ pineapple, cubed, or a tin of pineapple cubes

1 apple diced

½ cucumber, diced

A handful of toasted coconut slices

2 tbsp raisins

A handful of chopped coriander leaves

 

Simply mix all the ingredients together and serve alongside other salads or hot dishes.
