Chick Pea and Chorizo Salad


A main course salad, or tapas dish.  Try it with some fruity Spanish wine!


1 pack Aconbury Chick Pea Sprouts

250g long grain rice, cooked and cooled

150g pitted black olives

½ jar roasted red pepper in oil

A small red onion

150g Spanish chorizo, diced and fried for 3-4 minutes

20g fresh flat parsley

20g fresh mint

1 lemon

Chop the onion, peppers, parsley and mint.  Mix together with remaining ingredients, season well and serve with lemon wedges.
